Leftover makeover

Leftovers are a smart and delicious way to turn one meal into two. This will help keep you ahead of  the dinner curve. By turning one meal into two you can save a lot of time in the kitchen and bring fresh new flavors to the dinner table.

  • Make a fun taco salad or fajitas by sauteing onions with taco seasoning in a little oil; add your leftover chicken or beef, and serve with tortillas or taco fixings. I like to add lettuce, tomatoes, avocado, sour cream, salsa, cheese, mushrooms.
  • Next time you prepare roast beef make sure you make some extra. Make a shepherds pie- Stir together the left over roast beef chunks, brown gravy, and frozen mixed veggies. Pour mixture into a casserole dish and top with left over mashed potatoes or biscuits.
  • Saute some onions, add bbq sauce, chunks of left over roast beef. (Make sure you shred the beef) Serve on some hoggie rolls and there you have your bbq sandwiches.
