Substitute for panko bread crumbs

I love love love japanese food! I need to start posting more japanese recipes but I will have to save that for another time… There are a lot of japanese recipes that call for panko bread crumbs and sometimes it can be hard to find. Next time you have a recipe that calls for panko bread crumbs use the pepperidge farms breadcrumbs. You will just have to smash them a little more than they already are.

It is a great way to use up leftover stuffing packages that you have on hand. If you still dont have access to stuffing breadcrumbs which I find highly unlikely you could use a french loaf of bread.

Now I will say the benefit to using the pre-packaged stuffing is its a lot easier and VERY quick, but using day old french bread is more authentic texture wise. Just let the bread sit out on the counter for 4-6 days until it gets hard. Put the bread in a zip lock baggy and crush. That is how I always use up my day old french bread. If you just dont have french bread sitting around the house and still want to make panko bread crumbs NOW… Then just slice the french loaf, spread out on a sheet pan, bake at 200o, for about 1hr or until hard like a crouton.

The just put the bread in a zip lock bag and crumble.
