Is butter better?

A lot of people are afraid to use fats in their cooking. The fact of the matter is FAT=FLAVOR! Fats help keep foods from sticking, fat kicks up the falvor a notch in such a wonderful ways, fat helps the body digest protein and absorb nutrients, calcium, and the fat-soluble vitamins A,D, E, and K. Plus, because foods containing fat keep you fuller longer, it can help you control your appetite.   stick of butter
 But, how do fats stack up against each other? Like I previously said fat is flavor, and is an intregaual ingredient in everything from sauces to desserts.  You might be suprised to learn that butter has fewer calories and about 20% less fat than olive oil does. Also lard and duck fat may have some redeeming nutritional value. The fact that these fats are high in saturated and monunsaturated fats may prevent them from being considered health foods, but they are not dietary demons like people think. Its ok to induldge in a little fat every now and then. I like pom frites (fr-ee-ts) that have been fried in duck fat try it if you get a chance.

Butter- 110 calories, 12 grams of fat, 50% saturated fat, 30% monounsaturated fat

Lard- 115 calories, 13 grams of fat, 39% saturated fat, 45% monounsaturated fat

Duck Fat- 115 calories, 13 grams of fat, 33% saturated fat, 50% monounsaturated fat

Olive oil- 120 calories, 14 grams of fat, 14% saturated fat, 77% monounsaturated fat
